Ingredients:
1 to 1 1/2 lbs. ground beef, try this if you don't have a good, local source for grass-fed beef
1 medium onion, diced
1/2 head of white cabbage, chopped
4-8 oz. mushrooms (Shitake, Crimini, Portobello, etc.), chopped
Sea salt
Ground pepper
1. Sauté ground beef and onion in a skillet over medium heat, stirring occasionally to break up the ground beef, until it is cooked through and onions are tender. 2. Add mushrooms and cook, stirring occasionally, until they have reduced in size. Add cabbage. Continue to cook, stirring occasionally, until the cabbage is tender.

This is so super easy and perfect for leftovers. I usually make this with 1 1/2 lbs. ground beef, but 1 lb. would work just as well. With 1 1/2 lbs., this serves the three of us dinner twice or dinner once and leftovers for husband for work. The little one always asks for seconds. Total cook time about 30 minutes.
