Easy Mexican Rice

We love this rice alongside (or in) our burritos and/ or fajitas and it is super easy.



Ingredients:
2 medium sized tomatoes, chopped
2 cups water or broth
1 1/4 cup rice
1 cup corn
1 tbsp. butter
2 tsp. chili powder
3/4 tsp. oregano
1/2 tsp. garlic powder
1 tsp. cumin

How To:
1. Combine all ingredients except corn in a medium saucepan. Bring to a boil, cover and reduce heat to simmer.
 
2. Cook for about 45 minutes until water is absorbed. Add corn and mix. **If using fresh corn, add at the beginning with all other ingredients so it has time to cook.
