Boneless Chicken Stuffed with Ham

Don't let the "fancy" name deter you from trying this super easy, throw it together chicken dish.



Ingredients:
1 lb. boneless chicken breasts or thighs, pounded about 1/4 inch thick
1/3 cup shredded cooked ham
2 tbsp. dried parsley
4-6 slices of bacon
4 tbsp. butter
Sea salt & pepper to taste

How To:
1. Prep: Preheat oven to 350 degrees. Determine the number of "rolls" you will make - if you have two pieces of chicken, you'll make two rolls, etc. If you're using breasts you'll probably have 2-3 rolls and thighs, you'll probably have 5-6 rolls.

2. Create: Divide your bacon, parsley, butter, and ham evenly amongst your rolls. For each piece of chicken, prepare as follows: lay bacon flat and top with a piece of chicken. On one side of the chicken, lay ham, parsley, and butter. Fold the other half on top and wrap the bacon up and around. Secure with toothpicks. Sprinkle with salt and pepper and set in a baking dish.

3. Bake: When all rolls are done and placed in the baking dish, cover and bake for 30 minutes at 350 degrees and then another 15 to 20 minutes uncovered at 425 so the bacon crisps up a bit and chicken is cooked through. Your cooking time will vary depending on the size and thickness of your chicken so please be sure to adjust your times as needed.


Comments:
This is something that is super easy to throw together on those busy nights. This takes about an hour to cook, but prep time is super fast -  less than 15 minutes. It serves about 4 people.
