Cabbage Slaw

This is a great side dish or would be delicious in fish tacos.

About 2-3 cups shredded red cabbage
About 1/4 cup green pepper, julienned
About 1/4 cup onion (or a little less), thinly sliced
About 1/4 to 1/3 cup white wine vinegar
About 1-2 T honey, drizzled over the slaw
Salt and pepper to taste

How To:
Mix the above and chill for about an hour, if possible.

Comments: I know what you're thinking - "another cabbage recipe!!!!" Well, there is a lot of cabbage in one head of cabbage and I have been trying to use it up. So anyway, yes, another cabbage recipe. You might try this in fish tacos, with a little shredded carrot, in addition to serving as a side dish. Red cabbage is low in calories, a good source of dietary fiber, and a rich source of several vitamins (A, C, and K). In addition, it contains polyphenols, which may offer antioxidant, anti-inflammatory, and anti-cancer benefits. Red cabbage is also rich in beta-carotene. Furthermore, one cup of raw red cabbage provides 10% of the recommended daily value of manganese, a trace mineral that is involved in energy metabolism or converting carbs, proteins, and fats into energy for cells to utilize.

Red cabbage includes at least 36 anthocyanins and emerging evidence suggests that they may provide cancer protection, improve brain function, and promote heart heath. An earlier study showed that some anthocyanins yield twice the antioxidant power of the same amount of vitamin C in test tubes.
