In my house, we get stuck in the chicken rut, chicken Monday, chicken Tuesday, chicken Wednesday, etc. (ok, you get the point) and the little one swears he hates chicken (not true, but I start to feel that way too after four nights in a row). Anyway, this little treat is super easy and such a great flavor change from the standard fare. I think you'll love it if you give it a try.
Ingredients:
About 1.5 pounds pork loin boneless chops
1/2 medium onion, diced or sliced thinly
Olive Oil
1 tsp. ground cumin
1 1/4 tsp. ground coriander
1 1/4 tsp. ground cinnamon
1 1/4 tsp. paprika
1/4 tsp. sea salt
1/4 tsp. pepper
Fresh chopped parsley (garnish)
Plum sauce:
2 cups water
1 9 ounce package of pitted dried plums, chopped
1 tsp. ground cumin
1 heaping tsp. ground coriander
1 heaping tsp. ground cinnamon
1 heaping tsp. paprika
1/4 tsp. salt
1/4 tsp. pepper
Juice from half a lemon (about 1 to 2 tbsp.)
How To:
1. Sauce: Start the plum sauce first. Combine all plum sauce ingredients except lemon juice in a medium saucepan. Bring to a boil over medium heat, reduce heat to low, and simmer for about 20 minutes total.
2. Season and Cook Pork: Combine seasonings for pork. Rub oil and seasoning mixture onto both sides of pork filets. sauté in a large sauté pan with onion in a little olive oil over medium heat. Cook about five minutes per side or until done (you'll have to make this determination based on the thickness of your meat).
3. Serve: Before serving, squeeze lemon into sauce and mix well. Serve pork with plum sauce on top.
Comments:
Serves about 6, which would be one small pork filet and a little sauce for each person or 4 hungrier people. Takes about 15 to 20 minutes hands on time. The plum sauce is really delicious and would be nice with lamb or chicken as well.
