Chocolate Peanut Butter Treats

If you are looking for a quick and easy snack, look no further. These little treats are super fast to make and will satisfy any "snack" craving.



Ingredients:
1 cup ground, soaked and dried pecans***
6 tbsp. peanut butter (or almond butter or cashew butter, etc.)
4 to 5 tbsp. cocoa powder, try this
1 1/2 tsp. vanilla extract, try making your own
2 tbsp. raw honey, I used this one
1/4 tsp. sea salt
1-2 tbsp. almond flour (optional)

How To:
1. Grind your pecans (I use my magic bullet) and combine them with all other ingredients in a medium sized bowl.

2. Mix until all ingredients are combined well (it's easiest to use your hands).

3. Roll into little bolls and refrigerate for a couple of hours. Use about 2 to 3 tsp. for each ball. Roll in almond flour, if desired.

Comments:
Make lots! They don't last long. As you can see below, this recipe makes about 35 little balls, more or less depending on size. I like to make them smaller simply because they are so rich. This only takes about 15 to 20 minutes to make.

Regarding your nut butters, if you are not making them yourself, be aware of where you are getting them and be sure there are no funny ingredients in the ingredient list. Wilderness Family Naturals offers a line of interesting nut butters made from soaked and dried nuts that would be worth looking into. It is much less expensive, however, to make your own. Try this recipe for almond butter using a simple trick!

These treats were inspired by this recipe, which I actually like a little better because the coconut oil in them makes them a little harder when they are cooled in the refrigerator. I made this version because I was out of shredded coconut and coconut oil, and they taste very good too.

***To soak your pecans is a simple process involving only a bit of forethought. For every cup of pecans, add to filtered water with 1/2 tsp. sea salt. Allow to soak for 7+ hours then remove and rinse. You can easily dry them by arranging them on a baking sheet and then baking overnight at 150 degrees. My oven only goes to 170 degrees and that works just fine. I try to stir once before I go to bed and when I wake up I remove them from the oven. Works great!
